Smothered Bean Burrito with Pork Green Chile

A soft flour tortilla packed with beans, smothered in tender pork green chile stew, and topped with melty cheese. The ultimate plate of comfort!

Ingredients:

For the pork green chile:

1 lb pork shoulder, diced

1 tbsp lard or oil

1/2 onion, chopped

2 cloves garlic, minced

2 cups chopped roasted green chiles (Hatch or Anaheim)

1 tomato, diced (optional)

1.5 cups chicken broth

Salt and pepper to taste

Optional: 1/2 tsp cumin or Mexican oregano

1 tbsp flour (optional, for thickening)

For the beans:

2 cups cooked pinto beans or 1 can, drained

2 tbsp lard or vegetable oil

Salt to taste

1/4 cup bean broth or water

Optional: cheese or bacon bits

For assembly:

2 large flour tortillas (burrito size)

1 cup shredded cheese (Monterey Jack, cheddar, or a mix)

Optional toppings: chopped onions, sour cream, cilantro
