Ingredients:
For the green chile pork stew:
1.5 lbs pork shoulder or pork stew meat, cut into chunks
1 tbsp oil or lard
2 cups roasted green chiles (Hatch or Anaheim), chopped
1/2 onion, chopped
2 cloves garlic, minced
1 tbsp flour (optional, for thickening)
1.5 cups chicken broth or water
Salt and pepper to taste
Optional: pinch of cumin or oregano
For the fried potatoes:
3 medium potatoes, peeled and sliced into rounds
2 tbsp oil or bacon grease
Salt, pepper, garlic powder to taste
For the refried beans:
2 cups cooked pinto beans (or 1 can, rinsed)
2 tbsp lard or vegetable oil
1/4 cup bean broth or water
Salt to taste
Optional: shredded cheese
