π¨βπ³ Instructions:
1. Brown the Beef
In a large pot, cook the ground beef over medium heat until browned. Drain excess fat if needed.
2. SautΓ© Aromatics
Add chopped onion and garlic. Cook for 2β3 minutes until soft and fragrant.
3. Add Veggies
Stir in tomatoes, green chile, and corn. Cook for another 2β3 minutes.
4. Add Squash & Broth
Mix in sliced squash and pour in broth or water. Season with salt and pepper. Simmer uncovered for about 15β20 minutes, or until squash is tender and flavors are blended.
5. Serve
Top with chopped cilantro if desired, and serve with warm tortillas on the side.

For a spicier version, add a chopped jalapeΓ±o with the garlic. You can also use shredded beef instead of ground for a richer flavor.
