This rich and hearty stew is a bold New Mexico-style comfort dish made with tender pork, roasted Hatch green chile, and rustic seasonings. Perfect with warm tortillas or served over rice!

📌 Ingredients:

2 lbs pork shoulder or pork stew meat (cut into chunks)

Salt & pepper to taste

1 tbsp oil (vegetable or lard)

1 medium onion (chopped)

4 garlic cloves (minced)

1 lb roasted Hatch green chiles (peeled, seeded, chopped)

3 Roma tomatoes (chopped) or 1 can diced tomatoes

2–3 small potatoes (peeled and diced)

4 cups chicken broth (or water with bouillon)

1 tsp Mexican oregano

1/2 tsp cumin

Optional: a pinch of flour or cornstarch to thicken
