For the Chile Rellenos:

8 large poblano peppers

1 cup shredded Monterey Jack cheese (or queso fresco)

1 cup cooked chicken, shredded

8 egg roll wrappers

1 tsp cumin

1 tsp garlic powder

Salt & black pepper, to taste

Cooking spray or vegetable oil, for frying/baking

For Serving:

Salsa, sour cream, or guacamole (optional)
