Instructions:

Step 1: Prepare the Salsa Roja

In a small pot, bring water to a boil and add tomatoes and dried guajillo chiles. Boil for 5 minutes or until softened.

Blend tomatoes, softened chiles, chipotle (if using), garlic, onion, oregano, bouillon, and 2 cups of water/broth until smooth.

Heat 1 tbsp of oil in a pan, strain the blended sauce into the pan, and simmer for 10-15 minutes until slightly thickened.

Step 2: Make the Albóndigas (Meatballs)

In a bowl, mix ground beef, bread crumbs, egg, garlic powder, onion powder, cumin, paprika, salt, and pepper.

Divide the mixture into small portions, flatten each portion, and stuff with a small amount of cheese. Seal into a round meatball shape.

In a large skillet, heat a little oil and lightly brown the meatballs on all sides (they don’t need to be fully cooked).

Step 3: Cook the Albóndigas in Salsa Roja

Transfer the browned meatballs into the simmering salsa roja.

Cover and cook on medium-low heat for about 20 minutes until the meatballs are fully cooked.

Sprinkle extra shredded cheese on top, cover, and cook for 2-3 more minutes until melted.
