Ingredients:
For the Calabacitas:
2 medium zucchinis (sliced into rounds)
1 lb ground beef (or ground turkey for a lighter option)
1 medium onion (diced)
2 cloves garlic (minced)
1-2 medium tomatoes (chopped)
1 jalapeño (optional, for extra heat)
1-2 tbsp olive oil (or vegetable oil)
1 tsp cumin powder
1 tsp paprika
Salt and pepper to taste
Fresh cilantro (for garnish, optional)
For the Salsa Verde:
5-6 medium tomatillos (husked and rinsed)
2-3 medium serrano peppers (adjust to taste)
2 cloves garlic
1/2 cup water (or chicken broth for extra flavor)
Salt to taste
