Mexican Chili Verde Pork Burritos with Hatch Green Chile Sauce

Ingredients:

For the Pork:

2 lbs pork shoulder or pork butt, trimmed and cut into large chunks

1 onion, quartered

4 garlic cloves, smashed

2 cups chicken broth

1 tbsp ground cumin

1 tbsp ground coriander

1 tsp oregano

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

2 cups Hatch green chiles (can use canned Hatch chiles or roasted fresh)

For the Hatch Green Chile Sauce:

1 tbsp olive oil

1/2 onion, diced

2 garlic cloves, minced

3-4 fresh Hatch green chiles, roasted and peeled (or canned)

1 cup chicken broth

Salt and pepper to taste

For the Burritos:

Large flour tortillas

Shredded lettuce

Diced tomatoes

Sour cream

Shredded cheese (Mexican blend or your choice)

Optional: Avocado slices, pickled jalapeños, cilantro
