Directions:

1. Prepare the Tortilla Chips:

If you’re making homemade tortilla chips, cut corn tortillas into wedges and fry them in a skillet with oil over medium-high heat until golden brown and crispy. Alternatively, you can use store-bought chips.

Drain the chips on a paper towel to remove excess oil.

2. Make the Green Chile Sauce:

In a medium skillet, heat the olive oil over medium heat.

Add the chopped onion and sauté until softened (about 2-3 minutes).

Stir in the green chiles and cook for another 2 minutes.

Pour in the green chile sauce and bring it to a simmer. Let it cook for 5-7 minutes, allowing the flavors to meld together.

Season with salt and pepper to taste.

3. Assemble the Chilaquiles:

Pour the green chile sauce over the tortilla chips in a large skillet or baking dish. Toss to coat the chips evenly with the sauce.

Sprinkle the shredded cheese generously over the top of the chips.

Cover the skillet with a lid and cook over medium heat for 3-5 minutes, or until the cheese is melted and bubbly. For extra cheesy chilaquiles, feel free to add more cheese on top during cooking.

4. Serve:

Once the cheese is melted and the chips are heated through, remove the skillet from the heat.

Garnish with chopped fresh cilantro, a drizzle of sour cream or Mexican crema, and sliced avocado if desired.

Tips for Success:

Sauce: If you prefer a spicier dish, you can use a hotter green chile sauce or add jalapeños to the green chile sauce.

Tortilla Chips: For an extra crispy texture, bake the tortilla chips in the oven for a few minutes before using them.

Add Protein: Add cooked chicken or eggs on top to make this dish even heartier.

These Mexican Green Chile and Extra Cheese Chilaquiles are the perfect combination of crispy chips, flavorful sauce, and melty cheese—ideal for breakfast or dinner! 🌶️🧀
