Mexican Green Chili, Chicken & Cheese Tamales

Directions:

Prepare the Tamale Dough (Masa):

In a large mixing bowl, combine the masa harina, baking powder, and salt.

Slowly add the chicken broth while mixing the dough with your hands or a spatula, adding more broth if needed until the dough is smooth but not too wet.

Add the vegetable oil or lard to the dough and continue mixing until it’s soft and fluffy.

Stir in the grated cheese to the dough until well incorporated.

Prepare the Filling:

In a separate bowl, combine the shredded cooked chicken, green chili salsa (or roasted chopped green chiles), shredded cheese, cumin, salt, and pepper. Mix until everything is well combined.

Assemble the Tamales:

Drain the soaked corn husks and lay one flat on a clean surface. Spread a generous amount of masa dough on the husk, leaving space at the top and bottom.

Add a spoonful of the chicken and cheese filling in the center of the dough.

Carefully fold in the sides of the husk, then fold the bottom up, making sure the tamale is wrapped securely.

Steam the Tamales:

Arrange the tamales upright in a large steamer (or a large pot with a steaming rack).

Cover the tamales with a wet cloth and add water to the bottom of the steamer.

Steam the tamales over medium heat for about 1 to 1 ½ hours. Check the water level occasionally and add more if needed.

To test if the tamales are done, remove one and check if the dough has fully cooked and easily pulls away from the husk.

Serve:

Once cooked, let the tamales rest for about 10 minutes before serving.

Serve with additional green salsa, sour cream, or your favorite sides.
