Mexican Chorizo con Papas Tacos

Instructions:

Cook the Potatoes:

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.

Add the diced potatoes, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside but tender on the inside. Remove them from the skillet and set them aside.

Cook the Chorizo:

In the same skillet, add the chorizo and cook over medium heat, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes or until fully cooked and crispy.

Add the diced onion and minced garlic to the chorizo and cook for another 2-3 minutes until the onion is softened.

Combine Chorizo and Potatoes:

Add the cooked potatoes back into the skillet with the chorizo mixture. Stir to combine and cook for another 5 minutes, allowing the flavors to meld together.

Sprinkle with cumin, chili powder (if using), and adjust seasoning with salt and pepper to taste.

Warm the Tortillas:

Heat the tortillas in a dry skillet or on a griddle for about 30 seconds on each side until warm and pliable.

Assemble the Tacos:

Spoon the chorizo and potato mixture onto each warm tortilla.

Garnish with chopped cilantro and a squeeze of lime juice.

Serve:
