Mexican Mango habanero ceviche

Directions:

Prepare the shrimp: If you’re using cooked shrimp, chop them into bite-sized pieces. If using raw shrimp, make sure they are finely chopped and marinate in the lime juice for at least 30 minutes until opaque (if you prefer a fully cooked ceviche).

Mix the ingredients: In a large bowl, combine the diced mango, cucumber, red onion, tomato, and habanero. Add the chopped shrimp to the mixture.

Season the ceviche: Drizzle with olive oil and stir in the lime juice and orange juice (optional). Add salt and pepper to taste.

Garnish: Stir in fresh cilantro and adjust seasoning to your preference.

Chill and serve: Let the ceviche sit for 15-20 minutes in the fridge to allow the flavors to meld together. Serve chilled with tortilla chips or crispy tostadas.
