Homemade Mexican Gorditas de Azúcar

Ingredients:

2 cups all-purpose flour

1 cup masa harina (corn flour)

1/2 cup granulated sugar

1 1/2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon (optional)

1/2 cup unsalted butter, softened

1 large egg

1/2 cup whole milk

1/4 cup sour cream or Mexican crema

1 tsp vanilla extract

For garnish:

Extra sugar for sprinkling

Directions:

Prepare the dough:

In a large bowl, whisk together the all-purpose flour, masa harina, sugar, baking powder, salt, and cinnamon (if using).

In a separate bowl, cream the softened butter until smooth. Add the egg, milk, sour cream, and vanilla extract, mixing until fully combined.

Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms. If the dough is too sticky, add a little more flour until it’s easy to handle.

Shape the gorditas:

Divide the dough into small balls, about the size of a golf ball. Flatten each ball into a thick disk, about 1/4-inch thick.

Cook the gorditas:

Heat a griddle or large skillet over medium heat. Cook the gorditas for 3-5 minutes on each side, until they are golden brown and cooked through. You’ll know they’re done when they puff slightly and feel firm to the touch.

Serve:

While still warm, sprinkle the gorditas with extra sugar on top for sweetness. Serve with a hot cup of coffee or Mexican hot chocolate for a perfect treat!
