Strawberry crunch cheesecake bites

Ingredients:

For the Crust:
1 cup crushed graham crackers
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For the Strawberry Crunch Topping:
1 cup strawberry-flavored cereal (like Strawberry Krispies or Strawberry Pop-Tarts, crushed)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
2 packages (8 oz each) cream cheese, softened
1/2 cup granulated sugar
1/2 cup sour cream
1/2 cup heavy cream
2 large eggs
1 teaspoon vanilla extract
1/4 cup strawberry puree or strawberry jam
For the Strawberry Drizzle (Optional):
1/2 cup strawberry jam or preserves
1 tablespoon water

Directions:

Prepare the Crust:
Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners or silicone molds.
In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined.
Press about 1 teaspoon of the mixture firmly into the bottom of each muffin cup. Use the back of a spoon or your fingers to pack it down.
Bake for 5-7 minutes, then remove from the oven and let cool.
Prepare the Strawberry Crunch Topping:
In a medium bowl, combine the crushed strawberry-flavored cereal, granulated sugar, and melted butter. Mix until the mixture resembles coarse crumbs.
Set aside.
Prepare the Cheesecake Filling:
In a large bowl, beat the cream cheese until smooth and creamy.
Add the granulated sugar and mix until well combined.
Mix in the sour cream and heavy cream until smooth.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract and strawberry puree or jam until well combined.
Spoon the cheesecake filling over the cooled crusts in the mini muffin tin, filling each about 3/4 full.
Bake the Cheesecake Bites:
Bake for 15-18 minutes, or until the centers are set and the edges are lightly golden.
Turn off the oven and crack the oven door. Let the cheesecake bites cool in the oven for 1 hour to prevent cracking.
Remove from the oven and refrigerate for at least 2 hours, or until fully chilled.
Add the Crunch Topping:
Once the cheesecake bites are chilled and set, sprinkle the strawberry crunch topping over each one.
Prepare the Strawberry Drizzle (Optional):
In a small saucepan, heat the strawberry jam and water over medium heat until smooth and pourable. Let it cool slightly.
Drizzle the cooled strawberry jam over the cheesecake bites.
Serve and Enjoy:
