Ingredients:
For the Butter Pecan Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 tsp vanilla extract
3 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 cup whole milk
1 1/2 cups chopped pecans
1/4 cup unsalted butter (for toasting pecans)
1/2 cup brown sugar (for toasting pecans)
For the Cream Cheese Icing:
1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
2 tsp vanilla extract
1-2 tbsp milk (if needed for consistency)
Directions:
Prepare the Pecans:
In a medium skillet, melt 1/4 cup butter over medium heat.
Add the chopped pecans and brown sugar, stirring to coat the pecans evenly.
Cook for 5-7 minutes, stirring frequently, until the pecans are toasted and caramelized.
Remove from heat and spread the pecans on a baking sheet to cool.
Prepare the Cake:
Preheat your oven to 350°F (175°C).
Grease and flour three 9-inch round cake pans.
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in the toasted pecans.
Divide the batter evenly among the prepared cake pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
Prepare the Cream Cheese Icing:
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Stir in the vanilla extract.
If the icing is too thick, add 1-2 tablespoons of milk to reach the desired consistency.
Assemble the Cake:
Place one cake layer on a serving plate and spread a layer of cream cheese icing on top.
Add the second cake layer and spread another layer of icing.
Place the third cake layer on top and spread the remaining icing over the top and sides of the cake.
Garnish with additional toasted pecans if desired.
