Directions:
• boil the tomatillos and Serranos. When the tomatillos turn a pale green remove them and continue boiling the serranos until they turn a pale green also.
• Add the tomatillos, serranos, 2 garlic cloves, and 1/4 onion , cumin, oregano, salt, cilantro, and a small splash of broth to a high speed blender. Blend until smooth and set aside.
• In a pan add the bacon. When the bacon is nice and crispy remove and set aside.
• next add the green onions to the bacon fat and cook until light brown, remove set aside.
• Next add the cut up steak to the same pan and season with salt/pepper and cook until browned. ( there should be liquid from the steak and thats a good thing!)
• Add now add the salsa verde, green onions, broth, and some bacon.( at a little broth at a time to see how much broth YOU’d prepare )
• mix and taste for seasonings.
Serve with fresh pinto beans, cilantro, onions, and top it with fresh bacon!
