Break it apart with a spatula and cook until it starts to brown, about 5-7 minutes.<\/p>\n<p style=\"text-align: center;\">Add the chopped onions to the chorizo and cook until the onions are translucent.<\/p>\n<p style=\"text-align: center;\">Add the diced potatoes to the skillet. Cook, stirring occasionally, until the potatoes are golden and tender, about 15-20 minutes. Season with salt and pepper to taste.<\/p>\n<p style=\"text-align: center;\"><strong>Cook the Spam<\/strong>:<\/p>\n<p style=\"text-align: center;\">In another skillet, add the slices of spam. Cook over medium heat until both sides are nicely browned, about 2-3 minutes per side. Remove and set aside.<\/p>\n<p style=\"text-align: center;\"><strong>Prepare the Eggs<\/strong>:<\/p>\n<p style=\"text-align: center;\">In the same skillet used for spam, reduce the heat to medium-low and crack the eggs into the skillet. Cook until the whites are set but the yolks are still runny, about 2-3 minutes. Flip carefully if you prefer over medium eggs and cook for an additional minute.<\/p>\n<p style=\"text-align: center;\"><strong>Assemble the Dish<\/strong>:<\/p>\n<p style=\"text-align: center;\">Once the potatoes are cooked, sprinkle the shredded cheese over the potatoes and chorizo mixture.
