Ingredients (Serves 6-8)
For the Stew:
1.5 lbs (680g) boneless, skinless chicken thighs (or breasts)
1 tbsp olive oil
1 small white onion, diced
2 garlic cloves, minced
1 lb (450g) fresh green chiles (like Hatch or Anaheim), roasted, peeled, and diced (or 2 cans, 7 oz each, diced green chiles)
2 medium potatoes, peeled and diced into 1-inch cubes
2 medium carrots, sliced into 1/2-inch rounds
1 can (14.5 oz) diced tomatoes
1 tsp ground cumin
1/2 tsp dried oregano
4 cups chicken broth
1/2 cup fresh cilantro, chopped
