2 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 lb boneless, skinless chicken breasts or thighs (shredded)

1 cup roasted green chiles (hatch or Anaheim), diced

4 medium potatoes, peeled and diced

6 cups chicken broth

1 tsp ground cumin

½ tsp oregano

Salt and pepper to taste

Juice of 1 lime

Optional garnish: chopped cilantro, sliced jalapeños, or shredded cheese
