1 lb pinto beans (or any preferred beans)

6 cups water (for cooking beans)

1 medium onion (chopped)

2 cloves garlic (minced)

1-2 jalapeños (sliced, adjust to taste)

2 medium tomatoes (chopped)

1 medium carrot (diced)

1 green bell pepper (chopped)

1-2 cups smoked sausage (sliced, optional)

1 tablespoon vegetable oil

1 teaspoon cumin

1 teaspoon oregano

Salt and pepper, to taste

Fresh cilantro, for garnish
