Strawberry Cheesecake Squares Recipe

Ingredients:

For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

6 tbsp unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

1 cup heavy cream

¼ cup all-purpose flour

For the Strawberry Topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

For Garnish:

Fresh strawberries (optional)

Directions:

Prepare the Crust:

Preheat your oven to 325°F (163°C). Grease and line an 8×8-inch baking pan with parchment paper.

In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Press the mixture into the bottom of the prepared pan to form an even crust.

Bake for 10 minutes, then remove from the oven and let it cool.

Prepare the Cheesecake Filling:

In a large bowl, beat the cream cheese until smooth and creamy.

Add the granulated sugar and vanilla extract, and continue to beat until well combined.

Beat in the eggs one at a time, mixing well after each addition.

Mix in the sour cream and heavy cream until smooth.

Gradually add the flour and mix until fully combined.

Pour the cheesecake filling over the cooled crust and smooth the top.

Bake the Cheesecake:

Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.

Remove from the oven and refrigerate for at least 4 hours, or overnight.

Prepare the Strawberry Topping:

In a saucepan, combine the sliced strawberries, granulated sugar, lemon juice, and cornstarch.

Cook over medium heat, stirring occasionally, until the strawberries are softened and the mixture has thickened, about 5-7 minutes.

Let it cool to room temperature, then spread evenly over the chilled cheesecake.

Add the Garnish:

Optionally, top with additional fresh strawberries for an extra touch of freshness and flavor.

Serve:

Carefully lift the cheesecake squares from the pan using the parchment paper.
