Strawberry Oreo Cookies Recipe

Ingredients:

For the Cookies:
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup crushed Oreo cookies (about 10-12 cookies)
1/2 cup freeze-dried strawberries, crushed into small pieces (or you can use strawberry cake mix for flavor if freeze-dried strawberries are not available)
For the Frosting (Optional):
1/2 cup (1 stick) unsalted butter, softened
2 cups powdered sugar
1-2 tablespoons milk or heavy cream
1/4 cup crushed Oreo cookies
1/4 cup crushed freeze-dried strawberries

Directions:

Prepare the Oven and Baking Sheets:
Preheat your oven to 350°F (175°C).
Line baking sheets with parchment paper or silicone baking mats.
Make the Cookie Dough:
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs, one at a time, until fully incorporated.
Mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Gently fold in the crushed Oreo cookies and crushed freeze-dried strawberries.
Scoop and Bake:
Scoop heaping tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are just set.
Cool:
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Make the Frosting (Optional):
In a medium bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, beating until smooth.
Add milk or heavy cream, one tablespoon at a time, until you reach the desired consistency.
Fold in the crushed Oreo cookies and crushed freeze-dried strawberries.
Frost the Cookies (Optional):
Once the cookies are completely cooled, frost them with the strawberry Oreo frosting.
