Directions :

Prepare the Gorditas:

In a bowl, mix the masa harina, warm water, and salt until a dough forms.

Knead the dough until smooth and divide it into small balls (about the size of a golf ball).

Flatten each ball into a thick disk, about 1/4 inch thick.

Heat a skillet over medium heat. Cook each disk for 2-3 minutes on each side until slightly golden.

Once cooked, heat oil in a separate pan and fry the gorditas until puffed and golden brown. Drain on paper towels.

Prepare the Beef Filling:

In a skillet, cook the ground beef over medium heat, breaking it up as it cooks.

Add the diced onion and garlic and sauté until the onion is softened.

Stir in cumin, paprika, salt, and pepper, and cook until the beef is fully browned. Set aside.

Assemble the Gorditas:

Carefully slice open the gorditas halfway to create a pocket.

Stuff each gordita with the cooked beef mixture.

Top with lettuce, onion, cilantro, queso fresco, and salsa.
