12- Corn tortillas cut into triangles
1- Onion dice
2- Cloves of garlic minced
1- Red bell pepper diced really small
1- 28 oz can of your favorite enchilada sauce (homemade is better just didn’t have time to make my own)
2- Cups of shredded cheddar jack cheese blend from Costco
1- Cup of grated Cojita cheese
2- tablespoons of flour
1- tablespoon of chicken bouillon
3- tablespoons of vegetable oil
Salt to taste
1- Small can of sliced olives (optional).
